Now that the semester is over, I actually have some time to be cooking again. Since I have a tendency to lose notecards, here are a couple modified recipes I don't want to lose:
Mix 1Tbsp butter, 1/2c milk and 1/2 egg (yes silly I know, this is for one person). Add 3/4c flour, 1tsp baking powder, 1/2tsp salt and 2tsp sugar. Cook.
Oven to 375f. Bake empty (deep dish) frozen pie shell for 5-10 minutes to brown it, set aside. Meanwhile, defrost 1/4c of frozen spinach. Sautee a few cloves of garlic and a slice of onion, both finely chopped. Add spinach and 1/2c grated cheese, remove from heat.
Whisk 4 eggs in measuring cup, add half n half or whole milk to the 2 cup mark. Add sautee mixture to pie crust first, then egg mixture. Sprinkle with salt and pepper.
Bake 15-20 minutes, add a little cheese, then bake for the remainder of an hour.
